We are delighted to introduce Chef Seonghun Choi, owner chef at HAKUSI in South Korea, recently honored as a Rare Master 2026 in South Korea.

His path began in Seoul, South Korea, where he first laid the foundations of his craft, before refining his expertise through experiences across some of the world’s most respected gastronomic destinations. From Tokyo to Hong Kong, Perth, London, Macau, and back to Seoul, his career reflects a rare depth of international exposure and mastery of Japanese haute cuisine.

He has held key positions in iconic establishments such as Waketokuyama (Michelin 2-star), Ryugin (Michelin 2-star, Asia’s Best 50), Zuma London, and Mizumi at Wynn Palace Macau. Each chapter strengthened his exacting standards, his respect for technique, and his devotion to ingredient purity.

As founder and chef of HAKUSI, he has brought his vision to life in South Korea, leading the restaurant across Sinsa, Hannam, and Apgujeong, earning multiple Michelin distinctions, including the most recent 1-star recognition in 2026.

His journey reflects a constant dialogue between tradition and innovation, shaped by rigor and precision, values that resonate deeply with Rare Champagne.
