전통(傳統)과 정통(正統)의 차이

전통(傳統)정통(正統)은 비슷하게 쓰이지만 조금 다른 의미를 가집니다.

전통(傳統)은 오랜 시간 이어져 온 방식과 기술, 그 안에 축적된 원리와 태도를 말합니다.
반면 정통(正統)은 그 전통 안에서 본래의 계보와 방식에 충실한 흐름을 뜻합니다.

‘전통’적이지 않으면서 ‘정통’일 수는 없지만,
‘정통’이 아니면서 ‘전통’을 계승할 수는 있습니다.

하쿠시는 후자에 가깝습니다.

하쿠시의 요리는 정통 일식의 형태를 그대로 재현하지 않습니다.
그렇다고 전통에서 벗어나기 위해 새로운 것을 만드는 것도 아닙니다.

하쿠시가 지키고자 하는 전통은 형태보다 그 안에 있습니다.

다시를 우리는 온도와 시간, 물의 양.
쌀을 씻고 불리고 밥을 짓는 방식.
숯의 상태를 살피고 불을 다루는 방식.
제철 식재료가 가진 맛의 가장 좋은 순간을 끌어내는 일.

오랫동안 이어져 온 조리법에는 각각의 이유가 있습니다.
하쿠시가 중요하게 생각하는 것은 그 형태를 그대로 반복하는 것보다, 그 안에 축적된 원리와 재료를 대하는 태도를 이해하고 지키는 일입니다.

기본을 지키는 일에는 타협하지 않습니다.
대신 그 기본 위에서 무엇을 만들 것인가는 지금 이곳의 몫이라고 생각합니다.

서울에는 서울의 계절과 재료가 있고, 이곳의 생산자와 시장이 있습니다.
그리고 쉐프라는 한 사람에게는 여러 도시에서 보고, 먹고, 배운 시간이 쌓여 있습니다.

하쿠시의 요리는 그 위에서 만들어집니다.

뿌리가 없어서 자유로운 것이 아니라,
단단한 뿌리가 있기 때문에 그다음으로 갑니다.

Tradition (傳統) and Authenticity (正統) are often used interchangeably, but they carry slightly different meanings.

Tradition is what has been passed down over time—the techniques, practices, principles, and attitudes accumulated through generations.
Authenticity, on the other hand, is about remaining faithful to the lineage and established forms within that tradition.

It is difficult to be authentic without being traditional.
But it is possible to carry tradition forward without remaining within its orthodox form.

𝗛𝗔𝗞𝗨𝗦𝗜 belongs closer to the latter.

Our cuisine does not attempt to reproduce traditional Japanese cuisine exactly as it has always been.
Nor do we create something new simply for the sake of breaking away from tradition.

What 𝗛𝗔𝗞𝗨𝗦𝗜 seeks to preserve lies deeper than form.

The temperature, timing, and amount of water used to make dashi.
The way rice is washed, soaked, and cooked.
The way charcoal is tended and fire is controlled.
The work of drawing out the best expression of an ingredient at the height of its season.

There is a reason behind every technique that has endured over time.
For 𝗛𝗔𝗞𝗨𝗦𝗜, respecting tradition is not about repeating its outward form, but understanding and preserving the principles behind it and the way ingredients are treated.

There is no compromise when it comes to these fundamentals.
What we create upon them, however, belongs to the place and time we are in now.

Seoul has its own seasons and ingredients, its own markets and producers.
And a chef carries with him the years spent seeing, tasting, and learning across different cities.

𝗛𝗔𝗞𝗨𝗦𝗜’s cuisine is built upon all of these.

We are not free because we have no roots.
We move forward because our roots run deep.
