Kumizakana is a style of Japanese cuisine in which several small dishes are composed and presented together.
Unlike a dish that focuses on a single ingredient or cooking technique, kumizakana brings together different flavors, temperatures, and textures all at once.
Raw and cooked,
chilled and warm,
soft and crisp.
Each may be only a small bite, but each plays a different role. What ingredients are placed together, what follows each flavor, and even the colors, heights, sizes, and positions of the vessels are all considered as part of a single composition.
At 𝗛𝗔𝗞𝗨𝗦𝗜, kumizakana is served as the second course.
Before the meal begins to deepen, an assortment of small dishes offers an early glimpse of the season as 𝗛𝗔𝗞𝗨𝗦𝗜 sees it.
When these different dishes come together,
a single season unfolds through many flavors and forms.
At 𝗛𝗔𝗞𝗨𝗦𝗜, kumizakana captures one season in a series of small scenes.
